Why Grey Mullet?

The Grey Mullet is beloved in many Asian cuisines—but rarely prepared in true Japanese style. Its medium-firm texture and deep, satisfying flavour make it an ideal match for our signature dishes. Introducing Tonkichi’s New Grey Mullet Dishes

Our chefs have added Grey Mullet to four carefully curated dishes, blending Japanese comfort with fresh local ingredients. Here’s what’s new:

1. Tonjiru Udon with Sliced Mullet

2. Teppan Mullet with Ginger Sauce

Crispy on the outside, succulent within; savor the delicate flavors of fresh mullet, seared to perfection and finished with a fragrant ginger-infused special sauce. 

Served alongside sweet, tender carrots and earthy Horenso (Japanese spinach), this dish is a harmonious blend of umami, warmth, and natural sweetness — a comforting yet refined experience on every plate. Tuck into the pickles and rice side dishes for a perfectly balanced meal.

3. Spicy and Sour Sliced Mullet Nabe

A vibrant, umami-rich hotpot featuring tender slices of mullet simmered in a bold spicy and sour broth. 

Accompanied by shiitake mushrooms, silken tofu, Japanese leek, carrot, naruto maki, and long cabbage, this hearty dish strikes the perfect balance of heat, tang, and deep, comforting flavors. Comes with pickles and rice for a perfectly balanced meal.

4. Sliced Mullet Hot Udon Soup

Light, clean, and nourishing — this delicate soup features thinly sliced mullet gently simmered in a clear, refined broth that allows the natural sweetness of the fish to shine. 

The addition of spring onion brings a subtle sharpness that balances the flavors beautifully, adding freshness to each sip. Perfect as a light main, this dish offers a soothing and satisfying experience that’s both simple and elegant.
